General guidance rather than anything specific to New Jersey, and it holds for any rancher anywhere. Five questions, and the reason each one matters.
Ask whether the animals were born on the place
A ranch that runs its own cow-calf herd knows the whole life of the animal. An operation that buys in cattle to finish does not, and there is nothing wrong with saying so. The answer tells you how much of the story the seller can actually vouch for.
Ask where the processing happens, and under whose inspection
USDA inspected product can be sold across state lines and by the cut. State inspected product usually cannot leave the state. That single fact explains most of what a small ranch can and cannot sell you, and it is a fair question to ask before you order.
Ask what the finishing ration is
Grass finished, grain finished and grass raised then grain finished are three different products that cook differently and taste different. None of them is a trick. You just want to know which one you are buying, because grass finished beef needs lower heat and less time.
Ask for the hanging weight and the cut sheet before you commit to a share
A share is priced on hanging weight, and what you carry home is less than that. Ask what the last few animals hung at, and ask to see the cut sheet you will be asked to fill in. A first time share buyer who has not seen a cut sheet usually regrets a choice or two.
Know what a grocery label does and does not tell you
For years, Product of USA could appear on beef from cattle raised abroad if the meat was merely processed here. The standard has since been tightened. That history is exactly why buying from a ranch you can name beats reading a package.
